The best overnight oats in the goddamn world

An overnight oat recipe inspired by PickUp Limes classic Peanut Butter & Jelly Overnight Oats. I’m obsessed and have it for breakfast every single morning.

Ingredients you’ll need

  • Half a cup of rolled oats
  • Half a cup of milk
  • 1 tablespoon of chia seeds
  • 1 tablespoon of linseeds
  • 1.5 teaspoons of psyllium husks
  • 1 teaspoon of honey
  • Half a teaspoon of cinnamon
  • 2 tablespoons of peanut butter (🐈‍⬛ no added salt or sugar)
  • Half a cup of frozen blueberries

The classic overnight method

  1. In the container you’ll store your oats in, add the dry ingredients (excluding the psyllium husks). So: rolled oats, chia seeds, linseeds, cinnamon.
  2. Next, add the honey and milk. Mix until combined. You may need to add a little more milk if it looks too thick. Also scrape off any stubborn peanut butter from the spoon and make sure to mix that in too.
  3. Add the frozen blueberries and mix gently until they’re mostly dispersed around the oat mixture.
  4. Flatten the mixture in the container until the top is mostly smooth. Sprinkle over the psyllium husks. (I used to do this part in the morning, but I got lazy and just sprinkle it on top the night before.)
  5. Close the lid and pop the container in the fridge for the night.
  6. When serving, add 3-4 dollops of yoghurt on top of the soaked oats and mix together until it reaches a consistency to your liking.

The emergency morning method

Here’s the “oh shit, I forgot to make my overnight oats yesterday” version of this recipe.

  1. In a bowl, add the oats, milk and half a cup of water.
  2. Microwave for 1 minute on high.
  3. Stir the oats and then microwave on high for another minute.
  4. When it’s done, add the rest of the ingredients and mix together gently. Since the oats are hot as heck, the peanut butter and blueberries will become soft quite quickly.
  5. Add more milk once the peanut butter has melted and mix until it reaches a consistency to your liking.
  6. Enjoy! (For this version I skip the yoghurt since there’s more milk to make it creamy and delish.)
